June 11, 2024I have tried to make a couple of recipes. like the Karaage chicken: I found the marinate to be too extremely salty (adding salt already to a soy sauce base). It's definitely adapted for the American palate with greasy, salty and what it seems overly sweet recipes that sometimes don't make too much sense (from an European perspective), but if you like Joshua's youtube channel is a good book to have.

February 1, 2022This book follows the great format that Josh Weissman uses for his online videos. He starts with the basics, and builds on it. He's written clear and concise instructions and useful recipes and tips. Includes a useful contents page, and an index. The book is physically solid and well set-out. Such a motivator to cook from scratch where possible. Great for beginners:)
